DINNER: BROILED SALMON WITH SHIITAKE-GINGER-GARLIC PILAF

Serves 2

Salmon contains naturally occurring omega oils, and shitake mushrooms, garlic, and ginger may help protect you from digestive cancers. Here’s a quick dish that presents beautifully—outside and in.

FOR THE FISH

2 (6-ounce) salmon fillets

2 tablespoons olive oil

juice of 1 lemon

2 cloves garlic, diced or sliced

¼ teaspoon sea salt

¼ teaspoon cracked pepper

FOR THE PILAF

1 cup brown rice, Bhutanese red rice, quinoa, or red quinoa

1 cup organic veggie stock and ½ cup water (or 1½ cups water if you don’t have the stock)

2 teaspoons peeled and grated fresh ginger

1 tablespoon olive oil

1 clove garlic, sliced

1 cup sliced shiitake or other mushrooms

2 cups arugula or raw baby spinach

lemon wedges, for squeezing

sprig of fresh rosemary, optional
